Presenting exquisite Singapore heritage through food that touches the palate and the soul, Folklore delivers both culinary presentation and cultural harmony.


Imagine a folklore that had been passed from generations that is rich in values never wiped away by time. With those kinds of experiences, Folklore, a Peranakan restaurant located at Destination Singapore, a new hotel managed by Park Hotel Group, brings a culinary experience that emphasizes on culinary heritage. A quip once said that when people talk about cuisine, they actually talk about their mom’s cooking.  That’s where Folklore’s basic values came from.

There is no one else that would translate the stories into palatable dishes than the man who underwent an extraordinary family culinary journey like Chef Damian D’ Silva. Raised in a multicultural family (Eurasian side from his Dad’s and Peranakan on his Mother’s side), made him think about what heritage food meant to him – what people ate at home on daily basis. Aside from it, he also thinks the importance of propagating tradition where food will not only forge communal ties, but also a repository of values and culture represented in each of Folklore’s menus.

In Singaporean context, the inevitably encompassed food came from five ethnicities – Chinese, Indian, Malay, Peranakan and Eurasian. Folklore serves dishes cooked in a traditional way that had an odd patois of Malay, English and local slang, with lots of soul. Dishes such as Peranakan’s Hati Babi Bungkus, Eurasian influenced Singgang and laborious ones like Sambal Buah Keluak and Kueh Kosui will take you to Singapore culinary heritage journey from the past.

Through Folklore, Damian hopes he could inspire new generations of chefs and home cooks whose palates are prime to appreciate making dishes from scratch. For a restaurant, Folklore is about storytelling through long family tradition of cuisines that shaped palates of generations through passion, memories and emotions while spreading the culture of their beloved country.
